There are a few different types of cherry whiskey that are available on the market. One type is made with sour cherries, while another type is made with sweet cherries. There is also a type of cherry whiskey that is made with a blend of both sour and sweet cherries. The infused whiskey is so strong that you can use it like an extract, mixing it with others liquors for what’s known as a “compound liquor”. For example, start mixing the cherry whisky with 1:4 parts dry white wine, adding cherry gastrique, or some burnt sugar for sweetness, along with a vanilla bean and a few peels or orange rind.

Over the years, I have experimented with various cherry-based recipes, and I have come to appreciate the incredible range of flavors that can be achieved with these little red gems. They are definitely whiskey, but they have had flavors and sugar (sometimes honey) added to accentuate a new flavor.
